Hallo Christian,

normalerweise hast du bei table und figure den optionalen
Placementparameter (siehe
http://www.eng.cam.ac.uk/help/tpl/textprocessing/teTeX/latex/latex2e-html/ltx-67.html)

mit einem Ausrufezeichen kannst du dem ganzen noch mehr Druck verleihen:
ich mache das so
\newcommand{\figurefullh}[3]{
\begin{figure}[!h]
\center
\includegraphics[width=\textwidth]{images/#1}
\caption{#2}
#3
\end{figure}
}

müßte so auch mit table gehen.
